Chocolate, Caramel and Macadamia Praline Mousse






A perfect way to celebrate new year's eve. This is a dessert consisting of a chocolate genoise sponge base, chocolate and macadamia praline layer of crunchy praline pieces and praline paste within milk chocolate, a dark chocolate mousse, caramel whipped cream filling, and a chocolate ganache mirror glaze. It is all topped with chopped macadamia nuts and gold leaf.

The flavours are rich and chocolatey, lightened by the caramel cream centre. The praline is wonderfully crunchy with a great taste. The chocolate ganache is shiny and smooth, although a little more would have been good to help it pour over better without patchwork. The gold leaf makes it look extra special and set for new year's celebrations. I am very pleased with it on the whole. A little more refinement and attention to detail aside, it is great!
