Lebkuchen Bundt Cakes
These are traditional christmas lebkuchen in bundt cake form. They are a dark muscovado sugar and black treacle sponge spiced with ginger, cinnamon, nutmeg and cloves. They are decorated with a plain water icing and a chocolate icing and topped with chopped stem ginger pieces.
The cake itself is a fairly dense sponge due to the low moisture content of the batter producing a deliciously cakey bundt. The icing is just sweet enough to cut through the spice flavour and, after rather a lot of indecisiongs, actually doesn't look too bad. This was the first use of my mini bundt tin and so I was unsure how the icing would work as a result of the lack of hole in the centre. Overall I think it worked out well and now I have experimented in preparation for future uses! Regardless of how the look, they taste delicious and are the pure essence of christmas.
