Cranberry, Rosemary and Hazelnut Biscotti

Christmas can most definitely not pass without baking some biscotti, and they make ideal presents. These are flavoured with fresh rosemary and lemon zest and contain dried cranberries and chopped hazelnuts.

The biscuit is just the right crispness with a bite but not so much they break your teeth. They have a lovely subtle rosemary and lemon flavour and the fruit and nuts work wonderfully. Perhaps a bit more filling would be ideal but other than that they are great. I may also try and make them longer and thinner like proper biscotti next time, but I can't really complain too much about these!
