Chocolate Panforte Tart






This is my version of an Italian christmas treat, a panforte. It features a shortcrust pastry case filled with a baked honey caramel filled with chopped pistachios, walnuts, almonds and candied peel, topped with a dark chocolate ganache and sprinkled with chopped nuts.

The pastry was thin and short, with no soggy bottom, despite my oven's inability to bake it well. The filling is sweet with a fairly subtle honey flavour. It could easily tolerate a little more. The nuts add a delicious crunch and the chocolate topping a luxurious final flavour. My other alteration would be slightly less chunky nuts (sorry Mary Berry!) but aside from that it was delicious!
