Strawberry and Raspberry Sherry Trifle Babas
This is a merging of two traditional desserts. I have used the flavours of a sherry trifle to put a twist on a rum baba. These feature a brioche style dough soaked in a strawberry, raspberry and sherry syrup with piped whipped cream and a dollop of raspberry jam.
The dough is a lovely consistency, rich and buttery. The flavour of the syrup is delicious although needed to soak in a little more (perhaps I will be more patient next time!). I topped them with cream as they disappointingly peaked whilst baking due to my lack of ability to wait for them to prove for long enough. However, despite this they are delicious and I think they don't look too bad in the end either!
