Dill, Lemon and Stilton Fish Pie




This is a fish pie made with a mixture of white fish, smoked fish and salmon. It is in a creamy dill and lemon sauce. The topping is sliced potatoes and stilton, grilled to melted.

The sauce itself is delicious and comforting with a perfect hint of lemon. The potatoes are crisp on the outside and soft on the inside and the saltiness of the stilton flavour compliments it all wonderfully. An unusual combination but one I very much enjoyed.
