Apple and Mincemeat Frangipane Pudding




This was christmas dessert. It is an apple and mincemeat pudding with a frangipane topping and flaked almonds.

The fruit and mincemeat combination are festive and delicious. The topping is almondy, light and delicious. It rose considerably in the middle due to the precooked apple and so formed a crack in the centre which then sunk due to its slightly undercooked centre. This made it taste even better.
