Vanilla and Mincemeat Shortbread Dodgers

This is the second of my two christmas work bakes. They are some vanilla shortbread sandwich biscuits filled with a vanilla buttercream and mincemeat.

The vanilla flavour is subtle but just strong enough to come through and contrast the rich mincemeat. The shortbread is perfectly baked to just browning so they are crisp and light. The whole thing is a delicious sweet treat.
