Almond and Berry Genoise Squares
A petit fours style cake for the festive season using some leftover jam. These are a genoise sponge sandwiched with mixed berry jam, coated with almond crème au berre, chopped almonds and featuring a dollop of the mixed berry jam on top.
The cakes are dainty and elegant. The sponge was lighter than I anticipated with a lovely flavour and texture. The jam was sweet and the berry flavour perfectly matched the almond. I had planned some piped crème au berre on the top however it did not pipe very well so more almond were added and I think this makes for a simpler but more sophisticated design.
