Battenberg Christmas Cake
This year's christmas cake as a gift for my mum is a take on a battenberg. The cake contains brandy soaked raisins, currants, sultanas and glacé cherries, as well as chopped blanched almonds. The lighter sponge is made with golden syrup and light brown sugar, the darker with black treacle and dark brown sugar. Both cakes are soaked in brandy. The whole thing is stuck together with apricot jam and wrapped in almond marzipan.
The cake itself is rich and fruity. The brandy flavour is strong but not overwhelming. I am over the moon with the colour difference and so look of the cake. It is fantastic and my mum loved it!
