Pistachio Meringues
These are some ordinary piped meringues sprinkled with chopped pistachio nuts.
These are the first good batch of meringues I have baked in my new oven. The mixture was stiff and they baked to become crisp, without burnt bottoms as has previously occurred. They aren't perfect as they browned a little too much but I am pleased nonetheless. The nuts on the meringue make them look special and so they are perfect for New Year celebrations.
