Vanilla and Pomegranate Cheesecake





This is a vanilla baked cheesecake with a biscuit base made of homemade brown sugar biscuits and topped with pomegranate seeds.

The cheesecake mixture itself is smooth and creamy with just enough vanilla flavour. The biscuit base is crumbly, butter and crisp just as it should be. The pomegranate seeds are, in my opinion, a welcome sweet addition giving a crunch to the top. It did not bake without cracking however, due to a few minutes too long in the oven, and the fan nature of it (rather than my usual oven) causing it too cool to quickly. So, I better keep practicing, and get to like eating cheesecake!
