Blackberry and Star Anise Danishes





These are some danish pastries which would be perfect for christmas or boxing day morning, or a late breakfast on new year's day. They feature a star anise spiced crème patisserie and blackberries, glazed with apricot jam and drizzled with icing.

The pastry itself was a rough puff method I have never tried before and it rose and flaked perfectly to be light and crisp. It is buttery and rich. The creme patisserie could have taken a little more star anise infusion and perhaps a tiny bit more on hte pastry could be tolerated however I think they look and taste great. The use of frozen blackberries meant the juice did run a little however this can't be seen too much under the icing so I won't complain!
