Christmas Pudding Pies





These pies are a combination of two christmas favourites, a mince pie and christmas pudding. They feature a sweet rich shortcrust pastry filled with brandy soaked currants, raisins, glacé cherries and mixed peel mixed with dark brown sugar and butter.

The pastry was a new shortcrust pastry recipe I was trying involving more sugar than usual, and a higher margarine to flour ratio. This made it a lot harder to work with as it was softer however it produced gloriously browned, short, crisp and delicious results. That is a keeper. The filling is also deliciously flavoured and I would say even perhaps beats a traditional mincemeat filled pie.
