Cherry Jam Swiss Roll
A swiss roll is essential for a great festive trifle. This is plain sponge filled with sweet cherry jam.
The method was a new one for me for a swiss roll using the separating egg technique. It produced a wonderfully light cake with a deliciously fruity cherry jam. It was typical that when I wanted to slice it perfectly, the jam was less set that usual. But other than that it is excellent an very fit for purpose.
