Chicken, Bacon, Cranberry and Stuffing Pie






This is definitely what should be done with christmas leftovers. I have made a hot water pastry pie filled with layers of chicken, cranberry sauce, sage and onion stuffing and smoked bacon. It is finished with pastry decoration.

This was an attempt at putting jelly into a picnic pie however the nature of the stuffing meant that all the stock was soaked up and therefore didn't set. Despite this disappointment, and a little patchwork on the pastry, the pie was a great success. The flavours are fantastic and it was eventually leak free. The layers look great and the balance of all the elements is just right. I am very happy.
