Forest Fruit and Cassis Trifle






A trifle perfect for christmas. This features a forest fruit and cassis jelly base, cherry jam filled swiss roll, vanilla custard and whipped cream topping, with sprinkled toasted flaked almonds.

The jelly base was rich in the blackcurrant cassis flavour with a lovely texture from the addition of the whole fruit pieces. The custard was well set but still smooth, soft and creamy. The crunch of the almonds was a welcome addition against the other elements. This is a perfect trifle.
