Cranberry Muffins

One of my favourite christmas fruits is cranberries. I have used them to make some traditional american muffins.

The cake itself is fairly plain with a slight hint of vanilla. The texture is almost spot on for a muffin, perhaps a little more milk and it would have been just right. The cranberries are sweet enough and fruity, adding a great flavour to a simple bake. They need no decoration to be a great bake.
