White Chocolate and Hazelnut Crescents

These are my version of an almond crescent biscuit. They are a dough made with hazelnuts instead of almonds, with a little vanilla extract. They are dipped in white chocolate and sprinkled with chopped toasted hazelnuts.

The biscuits have a lovely earthy hazelnut flavour but are lightened by the addition of the vanilla extract. They are crisp and perfectly baked, although this was a little challenging to achieve as they spread far more than I expected. I think they perhaps needed to be rolled slightly longer and thinner than I did, but as they are they still look great. The white chocolate adds an elegant finish and a delicious sweetness elevating them to perfection.
