Strawberry and Apple Strudel



This is a strudel made of puff pastry filled with cinnamon and brown sugar spiced apple and strawberry slices, sprinkled with demerara sugar.

I use the term 'strudel' loosely with fear that I may upset the Germans as it doesn't use the traditional filo pastry. Nonetheless it has crisp and flaky layers encasing a wonderfully flavoured fruity filling. Despite my fears over the liquid content of the strawberries, the pastry baked to be golden brown and crisp on the base, with no soggy bottoms in sight! The demerara sugar adds an extra sweetness and crunch and tops off a delicious dessert perfectly.
