Port Pear and Blackberry Pies
This is a hot water pastry pie with a port poached pear in the centre and surrounded by blackberries.
The pastry is crisp on the outside and browned well on top, but did struggle to brown on the edges. The flavour of the port in the pear is delicious with a lightly alcoholic kick. The blackberries are tangy and contrast the otherwise sweet pear. The pie was perfect until I removed the mould and continued to bake it as the blackberry liquid seemed to find a way out and ended up tinging the bottom pink. Other than this, and my lack of wrapping the pear stalk in foil to prevent t burning, they are spot on.
