Peach Syllabub and Pistachio Cat's Tongues



This is a dessert perfect for the end of summer. It has a jelly made from peach puree and schnapps topped with a peach schnapps syllabub and chopped pistachios. It is perfect served with pistachio cat's tongues which are light egg white sponge biscuits.

The jelly is set perfectly and is boozy yet fruity, making it light and refreshing. The cream topping is not like a traditional syllabub as it didn't curdle from the lemon juice. It is instead a delicately flavoured cream that is a wonderful addition to the jelly. The pistachios add a slight earthiness and a different texture, and this is carried through to the cat's tongue accompaniments. It is a great way to use up some leftover summer fruit.
