Lime Curd Thins



These are some biscuits inspired by something I saw in the National Trust shop. They are some very thin shortbread style biscuits flavoured with lime zest and bound by homemade lime curd. They are, of course, finished with a light dusting of icing sugar.

The biscuits are very thin and therefore delicate with a lovely crisp texture. The flavour of the lime is slightly tangy but the quantity of sugar used is just right to contrast any sourness. The use of the lime curd made a great alternative to using egg yolks and gave a slightly creamy rounded flavour. These are definitely a winner.
