Lemon and Passionfruit Friands

These are some little ground almond friands flavoured with lemon zest and a little passionfruit juice, sandwiched with lemon cream cheese frosting and topped with a lemon and passionfruit glaze.

The sponge is slightly dense yet very light with a lovely moist crumb due to the melted butter and ground almond content. The flavour is slightly tangy due to the citrus but made fresh from the passionfruit. The cream cheese has just the right amount of sugar to prevent it tasting savoury. It works wonderfully with the sweet cake and glaze. The flavours are great and I think they look adorable.
