Cherry and Almond Madeleines
These are some little British madeleine cakes. They are an almond sponge coated in a cherry jam, crushed toasted flaked almonds and topped with a glace cherry.
This is my version of the classic raspberry jam and coconut coated madeleine sponge. The combination of the subtly flavoured moist almond cake with the sweet cherry jam and crunchy almonds is absolutely delicious. I think these are up there with my other miniature signature British cakes. They are elegant and delicate little bites of loveliness.
