Fig and Raspberry Crumble Bars
These are some biscuit bars with a light brown sugar shortbread style biscuit base and crumbled topping with a centre of a fig and raspberry jam.
I baked this differently to the previous time I made something like this. I cooked the biscuit base until it was set before topping with the fruit mix as it meant it didn't remain soft and soggy. I think the jam could have done with boiling a little more of the liquid off as it was still a little soft and wet so the crumble doesn't have the crunch I would like. Despite this, the flavours are great and the brown sugar is a great addition to the sweet fig and raspberry combination.
