Orange, Saffron and Ricotta Crepes

This is a dessert similar to a crepe suzette. It is an orange zest flavoured crepe filled with ricotta and soaked in an orange, cointreau and saffron syrup.

The pancake itself is well cooked with a lovely orange flavour, although was maybe a little thicker than I intended. The ricotta filling is savoury but delicious with the sweet, tangy and boozy syrup. The saffron is delicate and added in just the right quantity for once. This is a fantastic dessert.
