Marmalade and Ginger Bakewell Pudding



This is a pudding comprised of a puff pastry case, marmalade layer, and a Bakewell pudding mixture flavoured with ground ginger, ginger syrup and stem ginger pieces.

The pastry is light, crisp and flaky round the edges and baked well underneath. The marmalade and ginger flavours work well together, and the sweetness of the custard filling complements the tangy marmalade. There is perhaps a dash too much ground ginger in it as there is quite a strong kick to the filling which wouldn't be to everyone's taste, however I think it is delicious. Bakewell puddings are one of those unsung British puddings, overtaken in fame by the Bakewell tart, however I think it is far superior. If you've never had one, you don't know what you are missing!
