Giant Apple Juice Chelsea Bun



This is an oversized chelsea bun filled with light brown sugar and apple juice soaked raisins, sultanas and currants. It is glazed with honey and drizzled with a water icing.

The dough itself is light, moist and risen well. The apple juice soaking caused the fruit to be plump, sweet and juicy with a subtle apple hint, bringing out the flavour. It was challenging to roll up as the filling kept falling out and the excess apple juice on the strained fruit made the dough slightly wet, but I eventually managed to get it to coil and I am over the moon with how it turned out.
