Mint and Dill Banitsa



This is my version of  a banitsa, a Bulgarian filo pie filled with a mixture of eggs and soft white cheese. Mine is flavoured with mint and dill, and uses feta.

The pastry is light crisp and flaky, just spot on for filo. I am very happy with the lovely parcel is produced. The filling was inspired by a cookery demonstration at the Southsea food festival, and is a great combination. It is well seasoned, with the herbs bringing out the feta flavour perfectly. This is a delicious pie that is great for dinner but would also make a fantastic picnic snack.
