Pikelets and Scotch Coffee Butter



Today I have been baking some pikelets, which are similar to crumpets but not so tall and cooked without a ring. They are served with a scotch coffee butter, which is a mixture of butter, dark brown sugar, whisky and coffee extract.

The pikelets themselves are soft and well baked, with just the right texture. The butter has a strong boozy coffee kick which adds a great flavour to an otherwise bland item. These are great, and would be spot on served with jam for breakfast or maple syrup and bacon for lunch!
