Vanilla and Pineapple Concorde Cake
This is a concorde cake with three layers of meringue, vanilla mousse and fresh pineapple, coated in the mousse and meringue sticks.
A concorde cake is a pudding that is difficult to make as it requires perfect meringue and precise layering. It is usually found in a chocolate version, but this is a lighter take with a lovely freshness fruit cutting through the perfectly flavoured vanilla mousse. I am very surprised how great this turned out and that it actually looks just like it should. It is heavenly to eat with a wonderful texture contrast between the crisp yet slightly chewy centred meringue and soft mousse. It doesn't get much better where cold desserts are concerned.
