Turkey Curry Pie



I would say that the best way to use up leftover turkey is by making a curry. So I did just this, mixing the turkey with a tomato sauce flavoured with curry powder, garlic and parsley, along with some red pepper and onion. I then topped this with a lattice shortcrust pastry lid.

This bake allowed me to play with one of my Christmas presents, a pie lid mould. This made it very easy to create a perfect lattice shape, however the pastry shrunk a little in baking meaning I perhaps should have used a dish with a slightly smaller diameter. Other than this, I have no complaints about this pie. The curry filling is well spiced and adds a much needed moistness to the potentially dry turkey. The pastry is crisp and light and works wonderfully on the top.
