Pear and Cardamom Rice Pudding
On a cold day a dish of hot rice pudding is all you need to warm you up. This has caramelised pear slices in the base and is topped with rice pudding flavoured with cardamom.
The rice pudding is creamy and soft with the much needed skin on the top. The fruit is sweet and has a lovely caramel note which complements the pear wonderfully and adds a great boost of flavour to an otherwise potentially bland pudding. The cardamom adds a subtle back note that makes it absolutely delicious.
