Lime, Lemoncello and Coconut Mini Loaves
These are my festive version of a classic lemon drizzle cake. They are mini loaf cakes made with coconut and flavoured with lemon and lime zest, drizzled with a lime and lemoncello syrup, a lime and lemon icing and sprinkled with toasted desiccated coconut.
The sponge itself is light and very moist thanks to the syrup and the coconut addition. The citrus is tangy yet the flavour is sweet. I think they look festive, with little bits of snow on top and make for a great alternative to mince pies or Christmas cake.
