Sticky Toffee Meringue Roulade



I have baked a meringue roulade that is intended to resemble a sticky toffee pudding. The meringue itself is made with a combination of caster sugar and light brown sugar, and sprinkled with chopped walnuts. The filling is a whipped cream mixed with toffee sauce. The whole thing is dusted with icing sugar.

This is a simple yet elegant dessert full of sweet and indulgent toffee flavour. The walnuts give an earthiness which is absolutely delicious. I would say this definitely rivals the much loved classic sticky toffee pudding!
