Peppermint Candy Cane Shortbreads

These are some shortbread sandwiches filled with peppermint buttercream in a candy cane striped pattern.

This is an idea similar to a John Whaite chocolate sandwich biscuit, but mine are themes perfectly for Christmas. The biscuit is crumbly and short with the perfect light texture. The filling has a subtle yet distinct peppermint flavour that is just strong enough to add a candy cane taste without it being like eating toothpaste! They are delicious, and I think they look simple yet elegant.
