St Clement's Battenbergs and Double Chocolate Battenbergs



This is my innovative idea for Mr Kipling. They are my versions of the classic miniature Battenberg cake. I have two flavours. The first is a St Clement's Battenberg with lemon and orange sponges sandwiched with apricot jam and coated in orange marzipan. The second is Double Chocolate with a dark chocolate and white chocolate sponge, again sandwiched with apricot jam and coated in chocolate marzipan.

These cakes are a great take on the classic. The flavour combinations are delicious and the alternative marzipans are equally so. The lemon sponge took a little bit of experimenting to get enough of the flavour through, and the white chocolate needed a good amount to be added to battle the cocoa powder. Mr Kipling, I'd like to see these on the shelves!
