Frosted Cranberry Angel Food Cake

This is an angel food cake flavoured with lemon zest and coated in a boiled icing. It is topped with frosted fresh cranberries and chopped pistachios.

The angel food cake is light as air and has a lovely soft texture. It is like eating clouds. The boiled icing is the most successful I have made as I managed to successfully dissolve my sugar so it isn't grainy and is wonderfully smooth. The frosted cranberries make it look elegant and perfectly reflect winter. I think this cake greatly resembles a snowy day and makes you dream of white Christmas.
