Christmas Cakes



This year my Christmas cake has been made into miniature presents. They are a light muscovado sugar cake filled with sultanas, raisins, currants and glace cherries, all soaked in orange juice, zest and brandy, with blanched almonds and a lot of brandy drizzle. They are wrapped in almond marzipan and coated in sugarpaste icing. 

I am very happy with these cakes. I think they look adorable and make for perfect gifts to friends for Christmas. The flavours are delicious and the cake is moist, although I may have been a little heavy handed on the almond extract in the marzipan for some palettes. Either way, I am very happy indeed. For once my sugarpaste icing has turned out well!
