Parsnip Nut Roast Crumble



This is my take on a Christmas nut roast. It is a mixture of parsnip and onion flavoured with garlic and topped with a rosemary and thyme crumble mixture mixed with oats, hazelnuts and dried cranberries.

The parsnip cooked down well in the oven to become slightly charred but therefore give a wonderful caramelised taste. The herbs in the topping bring out its subtle flavour well. The addition of the hazelnuts and cranberries adds a hint of earthiness and a touch of sweetness, both adding to the overall balance perfectly. The topping is crisp and crunchy and takes a boring vegetable to new heights.
