Pigs in Blankets Puffs



No Christmas dinner is complete without 'Pigs in Blankets'. I thought I would put my take on the classic turkey accompaniment by putting the streaky bacon wrapped sausage in a rough puff pastry vol-au-vent style case.

Enclosing the little 'pigs in blankets' in the pastry was just like putting them to bed and tucking them in. They looked very cute, and managed to retain some of this charm after baking. The puff pastry is light, crisp and flaky, with a buttery richness. The streaky bacon coats the sausage to give it a delicious flavour. All these need is a little onion gravy and they are perfect.
