Za'atar Bagels
These are some bagels topped with za'atar, a mix of sesame seeds, oregano, marjoram and thyme.
The consistency of the bagel is just right with a lovely soft interior and chewy outside thanks to the poaching of them in bicarbonate of soda prior to baking. They have a wonderful deep brown colour. The za'atar has a great flavour and prevents them from being bland and boring. I like the twisting of the bagels instead of poking a hole in the centre. It looks a little more quirky. I think this is a winning method to keep them in the desired shape. I will definitely do it again.
