Pumpkin Whoopie Pies



There is nothing much more American and Halloween themed in a hybrid bake than a pumpkin pie whoopie pie. These are sponges made with pumpkin puree and spiced with cinnamon, ginger and mixed spice, with a water icing and pumpkin seeds, and filled with italian meringue. 

The whoopie pie sponges are moist with a delicious spiced flavour but could do with a dash more raising agent to make them slightly lighter and more aerated. The Italian meringue is very marshmallowy and therefore makes for a sweet, light and gooey centre. I am over the moon with how they look, their consistent shape and the overall eat. A delicious treat for Halloween.
