Plum Tarte Fine



This is a French Tarte Fine with thin slices of plum instead of the traditional apple, on a flaky pastry base, with a butter and golden caster sugar topping and flecks of gold leaf.

The pastry is delicate and light due to the flakes of butter that were present in the dough. I think it did need another turn or two as the chunks were still fairly large once I rolled it out hence some leaked out in baking, but nonetheless the texture and layers are great. The plums make a delicious variation on the normal apple, using a British harvest fruit. It needed no glaze as the fruit shines wonderfully. I think it speaks for itself. Simple, yet elegant.
