Earl Grey Pain au Chocolat



This is breakfast enclosed within danish pastry. It is a pain au chocolat with a dark chocolate filling flavoured with earl grey tea.

The pastry itself is perfect, being light and flaky, as well as being rich and buttery, It has great layers and browned wonderfully. The chocolate filling isn't too bitter and is therefore delicious. The subtle hint of earl grey makes them extra special and is an unusual delight. I think I should have perhaps frozen the lengths of chocolate ganache before filling the danishes so it leaked ever so lightly less, but other than that they are perfect. I am very happy with them. It can't get better for breakfast!
