Smoked Salmon and Cream Cheese Beignets



These are some fried black pepper choux pastry puffs filled with a smoked salmon, chive and lemon cream cheese mousse.

The choux itself is light and full of air, but did fry to have a slightly odd shape. They definitely weren't circular in any way. I think perhaps a little more egg and better shaping was needed. They aren't greasy and are fried just right. The mousse is creamy, well flavoured and has a lovely delicate smoked salmon flavour. These are a delicious little starter or lunch.
