Blackberry Meringue Red Velvet Cake



This is my cake ready for Halloween. It is a red velvet cake filled with crushed blackberries baked with a meringue base and top sprinkled with flaked almonds. It has a blackberry and blackberry coulis whipped cream centre, and is topped with fresh blackberries and more blackberry coulis.

I haven't ever made a proper red velvet cake, so I thought it was about time to do so. This one is incredibly moist thanks to the addition of the blackberries, and has a rich flavour. The meringue is crisp and adds a great textural contrast. The blackberry filling and topping are both tangy yet sweet and make for an absolutely delicious cake. The cake and coulis were designed to resemble 'blood' for Halloween and I think it does this whilst still making for an elegant bake.
