Strawberry and Ginger Victoria Finger Sandwiches

Seeing as I have conquered the other nine Bake Off technical challenges I thought I ought to also do my take on the final one. These are some victoria 'finger sandwiches' which consist of a lightly gingered sponge, strawberry jam and ginger buttercream.

I had to think of something different to do with my victoria sandwich as I figured it was a bit of a boring bake. So I used two of my favourite flavours, strawberry and ginger, and made it into finger sandwiches perfect for an afternoon tea.
