French Onion Kites



These are my tribute to a French onion soup and are some rough puff pastry kites with a red and white onion mixture caramelised in garlic and beef stock, topped with a gruyere and breadcrumb mix.

The puff pastry is incredibly light and flaky, and absolutely perfect, with a great buttery flavour. The filling is rich and full of strong beef flavour, with a slight sweetness from the caramelised onion. The topping is crisp and adds an extra crunch to an already fantastic tart. I think they look spot on and taste delicious.
